Lazy Hummus

I luuuuurrrve my food but unfortunately I’ve got very little talent in the kitchen, that’s the Beards area of expertise. He cooks most of our meals whilst I do the occasional tuna pasta or a greasy breakfast (I make the best scrambled eggs). It’s not that I hate cooking, I’m just not good at it – I’m not good with the timing, I’m the slowest chopper, and I basically panic when there is more than one thing happening. For me, cooking needs to be simple and quick. And so it can be. When I got my Blender I realised I could make more than just my morning smoothie, I realised I could make dips and sauces and all kinds. Since then I’ve been working out exactly what I can ‘cook up’ by throwing all the ingredients into my blender. And so I present to you – Lazy Hummus!

Here is what you need:

3 Tablespoons of Extra Virgn Olive Oil
3 Cloves of Garlic, chopped up
The juice of 1 fresh lemon
3 Tablespoons of Tahini
2 Tins of Chickpeas
4 Teaspoons of Salt
Pepper (to your taste)
Paprika (to your taste)

TheΒ food prep part i.e. juicing and chopping, took me about ten minutes (I told you I’m a slow chopper) but it literally takes 60 seconds to make, hence Lazy Hummus. Just bung all the ingredients into your blender or food processor, press blend, and voila, Hummus! I used the Paprika to season it, but you can add it in with the main ingredients if you wish.Β Serve as a dip or a starter with some ripped up pitta, some bread sticks, carrots or whatever it is you like to dip in Hummus, in my case cucumber!
