Easter Treats and Baking Cheats

Anyone who loves to bake will know that using a cake mix is an absolute baking sin (please forgive me Cake Gods?) BUT my Mum and I came across these fantastic cake mixes that are not only perfect for those who don’t have the time to bake a cake from scratch, but that taste absolutely incredible (trust us, we have tried and tasted a fair few batches now).

The beloved cake mix I speak of is Wrights Baking, and unlike other crappy supermarket mixes, Wrights comes in a lovely packaged paper bag, similar to a bag of flour (so it fits perfectly into your baking cupboard without anyone noticing it’s a mix). Wrights offer a variety of cake mixes:

Chocolate & Fudge cake
Toffee Cake
Carrot Cake
Ginger Cake

… to name just a few. From these bags you chose what you want to make; you can either bake 24 cupcakes, 12 muffins, or you can make one big fat cake! When your making these yummy delights, the only thing you need to add to the mix is water and sunflower oil – that’s it! So basically, making these delicious cakes – including oven time – will take no more than 35 minutes. And if your feeling a bit guilty for ‘Cheating’ you can put your own spin on the cakes, like I did. I made some Easter inspired muffins last month using the Chocolate & Fudge cake mix but I added chocolate mini eggs. The results were amazing. The shell stayed hard but practically dissolved once on your tongue, whilst the chocolate inside the shell melted and went all gooey. This combined with the tasty choc & fudge cake – delicious!

Last week I tried out the carrot cake mix, baking 12 carrot cakes for my nieces birthday. I didn’t add anything to the mix, but once baked I topped them each with my own low-fat carrot cake topping. I also sprinkled a little cinnamon powder on the top and decorated with little icing butterflies. Okay, so they weren’t the neatest of cakes, but it was quick, fun and they taste dam good.Β Β If you want to bake some Easter treats this weekend, but just don’t have the time to do it all from scratch, definitely try out these Wrights Baking mixes. I bought these Wrights mixes ALDI for around Β£1.40, but they are also stocked in Morrisons, Sainsbury’s and ASDA for around Β£1.60
