Blueberry Muffins (The Great Blogger Bake Off)

AsΒ I mentioned in Mondays Photo Diary, I was inspired by The Great British Bake Off to do some Baking at the weekend. I made some very delicious (if I do say so myself) Blueberry muffins, and they were one of the easiest things I’ve ever made in the kitchen, bar a mess. I wasn’t planning to share the recipe, but after finding out about the The Great Blogger Bake Off, an idea started up by Jewellery designer Laura of, I decided to join in the fun and share the recipe. Each week Laura is picking a theme, well, dessert or dish. You can find out more on the Facebook Page. This week the theme is biscuits – I know what I’m doing this weekend then – and last week was cakes, but I guess Blueberry muffins will have to suffice, here is how you make them, it took no time at all:


50g (5oz) fresh or dried blueberries
100g (4oz) caster sugar
100g (4oz) butter
300g (11oz) self-raising flour
1tsp baking powder
2 large eggs
1tsp vanilla extract
140ml (ΒΌ pint) milk

Cream the sugar and butter together. I used a wooden spoon and it turned out nice and fluffy.

Then add the eggs, one at a time

Add in the milk, the vanilla extract, followed by the flour and baking powder

Mix all together until a thick batter is formed, and then add the blueberries to the mix

Line a tray with 12 Muffin cases and spoon out evenly into the cases

Bake in the oven for 30 minutes 160Β°C/Gas Mark 3 (325Β°F). Once 30 minutes is up leave to cool for ten minutes
